Aging/Maturation (Cheesemaking)

Cheesemaking is an art that dates back to ancient times. One of the important stages of the Cheesemaking process is aging or maturation. Cheeses that are aged for a longer period are generally more expensive and have a more intense flavor. However, the aging process can also present challenges, such as unwanted yeasts or molds that may affect the flavor and texture of the cheese.
